Job Description

Hours: 5:30 a.m.- 2:00 p.m.

Basic Summary: Under minimal supervision, establishes, maintains and adjust supplies by conducting a physical inventory of 2600+ supply items daily. Supplies include all food items, tube feedings, paper supplies, small wares and chemicals used in the department. Daily orders using vendor ordering systems. Develops menus, standardized recipes, new product research and preparation methods and techniques. Supervises employees and coordinates activities and training in food production area. Maintains knowledge of department functions including food production, inpatient service operations, dish room area, and cafeteria services. Researches, develops, and establishes plans for process improvements in the department. Establishes and maintains criteria and standards of food quality. Supervision of food production and receiving/storage. Education:

  • Associate of Occupational Studies in Culinary Arts, required.

  • Bachelor’s Degree in Culinary Arts, preferred.

Licensure/Certification/Registry:

  • Valid State of Illinois Department of Public Health Certificate in Food Service Sanitation.

Experience:

  • Four years culinary experience: cooking, baking, cold food production with quantity cooking experience required.

  • Two years of purchasing and inventory control, preferred.

Other Knowledge/Skills/Abilities:

  • Possesses strong culinary knowledge: understanding recipes and amounts needed

  • Possesses good math, writing skills and the ability to calculate recipe/inventory of supplies accurately.

  • Good computer skills with the ability to learn new computer applications/software easily.

  • Possesses the ability to regularly lift, push or pull up to 50 pounds and safely operate product moving equipment.

  • Demonstrated ability to maintain detailed and accurate records of daily purchases/sales.

  • Demonstrates the ability to multitask autonomously while working on multiple responsibilities simultaneously and can deal with constant interruptions from coworkers, vendors, and management.
