MGM Resorts International Cook - Garde Manger (The Signature) in Las Vegas, Nevada

The Dining Services Cook prepares all meals and other food items for owners and guests while providing courteous and prompt service in various food outlets and events.All duties are to be performed in accordance with departmental policies, practices, and procedures

  • Prepare meals and other food items.

  • Provides food and beverage for all Food and Beverage outlets, including but not limited to: In-suite dining, Employee dining room, Delights, Starbucks, Pools, and Signature Events.

  • Set up, clean, and organize workstation based on standards established by Chef and by following station set-up sheets.

  • Operate a specific station with others or individually.

  • Use recipes and a variety of kitchen equipment to prepare soups, salads, desserts, sauces, casseroles, and beverages.

  • Bake, roast, broil, fry, and steam meats, fish, vegetables, and other foods.

  • Test cooked foods by tasting and smelling.

  • Must be able to produce outlet-specific foods to each outlet's specific standards.

  • Must produce food of quality and finesse required by a 4 or 5 star kitchen.

  • Ensures timeliness and quality of foods.

  • Attend training sessions and retains knowledge covered therein.

  • Comply with occupational, health and safety standards. Ensure foods are stored and kept at proper holding temperatures.

  • Label, date, and store products/foods properly.

  • Complete all closing requirements as directed by Chef.

  • Maintain productivity when there is not a high volume of food orders.

  • Greet owners, guests, and co-workers with warm smile, maintain eye contact, and communicate in a professional and pleasant demeanor. Treat all owners, guests and co-workers with maximum courtesy.

  • Attend regularly scheduled staff meetings.

  • Perform all other job related duties as requested.

Required:

  • Minimum of at least 21 years of age.

  • At least 2 years previous cooking experience in a high-volume restaurant or food and beverage outlet, preferably in a hotel environment.

  • At least 2 years previous experience in a high-end restaurant or food and beverage outlet, either 4 or 5 star/diamond or Michelin rated.

  • Excellent customer service skills.

  • Have interpersonal skills to deal effectively with all business contacts.

  • Professional appearance and demeanor.

  • Work varied shifts, including weekends and holidays.

  • High school diploma or equivalent.

  • Able to effectively communicate in English, in both written and oral forms.

Preferred:

  • Possesses short-order cooking skills, including egg cookery and other standard breakfast items with finesse.

  • Possesses refinement in basic cooking techniques including, but not limited to, searing, grilling, braising, steaming, and roasting.

  • Ability to read, translate and execute recipes.

  • Ability to work without direct supervision.

  • Excellent knowledge of basic kitchen equipment.

  • Must participate and successfully complete training and educational programs made available to the staff.

  • Previous experience working in a similar resort setting.
