The Sommelier is to have an extensive knowledge of wines and their suitability with various dishes offered in each restaurant.
ESSENTIAL FUNCTIONS AND TASKS:
Greet restaurant guests once seated.
Achieve financial, HR, and quality goals as set forth by the Executive Director of Hotel & Food and Beverage.
Present guest with wine list and encourage them to experiment with new wines.
Assist guest with their selection to ensure a proper food and wine match.
Up sell wines and spirits to enhance the guest’s overall dining experience.
Open, taste, filter, and decant wine.
Pour wine throughout guest’s dinner.
Wow restaurant guests to “entice” them to come back.
Inventory VIP wine stock and all wine storage cellars.
Maintain current, well presented wine lists in all F&B outlets.
Set up pars for wines and conduct regular monthly inventories.
Requisition product to bring inventory back to PAR.
Keep abreast of the latest wine trends and news.
Trains wait staff/management in all outlets on the art of food and wine pairings, as well as in wine sales and service.
Taste wines if requested by guest.
Set up BIN’s and label all wine storage areas.
Complete InfoGenesis request forms to ensure products are accurately accounted into the POS system.
Match wine receipts with end of night inventories to curtail pilferage.
Maintain cleanliness of work areas.
Attend training seminars relating to wine sales and service.
Perform other duties as requested by management.
EDUCATION and/or EXPERIENCE :
High School Diploma or equivalent and three years’ experience in fine dining, full service restaurant as a Wine Steward or Sommelier or an equivalent combination of education, training and experience.
Extensive knowledge of wines and spirits.
Proficiency in opening, decanting, filtering, tasting, presenting, and opening of all wines and champagnes.
Must possess extraordinary public relations and hospitality skills.
Must possess experience in a fine dining, full service restaurant as a wine steward or Sommelier.
Must be computer literate in Word, Excel, Outlook and PowerPoint programs as well as proficient on POS.
Must possess the ability to train other employees in all aspects of wine sales and service.
While performing the duties of this job, the employee is frequently standing, walking, listening, speaking and smelling.
Frequently walking distances of 10 to 30 ft., between various areas of department. Occasionally walking distances up to 300 ft.
Frequently using wrist motion, dexterity, and eye-hand coordination, reaching, twisting and balancing.
Frequently lifting 50lbs. Occasionally carrying, pushing, and pulling up to 300 lbs.
Work performed in climate-controlled environment with occasional hot and cold temperature changes. Employee will be exposed to secondhand smoke. The noise level in the work environment is usually moderate. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
Regular scheduled hours. Must be flexible if needed for occasional work outside of normal business hours.
